SBD - Phase 1 For Phase 2; add:For phase two or three, you could add something like Basil and Parmesan Rice with Pine Nuts.

Recipe Ingredients for SBD - Cucumber & Tomatoe Salad

2 cups Roma tomatoes, diced
1/2 tsp. sea salt
1 fresh ground black pepper (use more or less to taste)
1/4 cup crumbled Feta
2 T extra-virgin olive oil
1 1/2 cup chopped cucumber
2 T white wine vinegar

Recipe Directions for SBD - Cucumber & Tomatoe Salad

  1. Cut up tomatoes and place in medium-sized bowl. Add the salt, and a bit of fresh-ground black pepper. Combine ingredients and let sit at room temperature for about one hour.

  2. After the above ingredients have marinated about 45 minutes, start to cut up cucumbers into bite-sized pieces. Then combined tomato mixture, feta mixture, and cucumbersin large bowl. Let sit in fridge until you're ready to serve. Wisk together the olive oil and vinegar
