South Beach Diet Balsamic Chicken

Recipe Ingredients for SBD Balsamic Chicken

24 oz boneless, skinless chicken breast halves
1 1/2 tsp fresh rosemary, minced
2 cloves garlic, minced
1/2 tsp freshly ground black pepper
1/2 tsp sea salt
2 tbsp extra-virgin olive oil
4 tbsp white wine
1/4 cup balsamic vinegar

Recipe Directions for SBD Balsamic Chicken

  1. rinse and pat dry the chicken.

  2. comb rosemary, garlic, pepper and sea salt and mix well.

  3. place chicken in bowl, drizzle with the oil and rub the spice mixture.

  4. cover and refigerate overnight.

  5. preheat oven to 450

  6. spray heavy roasting pan or iron skille with cooking spray.

  7. place the chicken in the pan and bake for 10 min.

  8. turn the chicken over.

  9. if sticking, add 3-4 tablespoons water or white wine.

  10. backe 10 min or until the thermometer inserted in the thickest portion reached 160*F and the juices run clear.

  11. if the pan is dry, stir in another 1-2 tbsp water or white wine to loosen the drippings. Drizzle the vinegar over the chicken in the pan.

  12. transfer the chicken to plates. Stir the liquid in the pan and drizzle over the chicken.
