1/2 small eggplant, cut in large cubes
1 bell pepper, cut in chunks
1/2 onion, quartered
4 t olive oil

Recipe Directions for SB Roasted Eggplant and Peppers

  1. Preheat oven to 350 F.

  2. Place the eggplant, peppers, and onion in a nonstick baking dish. Toss in oil.

  3. Bake in the oven for 30-40 minutes, turning occasionally.

  4. Garnish with fresh basil, if using.
