Recipe Ingredients for SB Pork Scaloppine with Herbs

12 oz pork tenderloin
1 t dried basil
1 t dried thyme
1 T olive oil
3 T lemon juice
2 T capers, drained and rinsed

Recipe Directions for SB Pork Scaloppine with Herbs

  1. Pound cutlets to 1/4 inch thickness; rub with basil and thyme and season with salt and pepper.

  2. Heat oil in a large non-stick skillet over medium-high heat. Add pork and cook 2 minutes per side. Remove to a plate and cover to keep warm.

  3. Add lemon juice and capers to the skillet; bring to boil and cook until slightly reduced, about 1 minute.

  4. Top pork with sauce and serve hot.
