2 large eggs
2 T water
3 spears asparagus
1/4 c sliced mushrooms
1/4 c reduced fat mozzarella cheese

Recipe Directions for SB Easy Asparagus and Mushroom Omelette - 1

  1. Crisp cook asparagus, drain

  2. Combine eggs & water; mix well

  3. Heat skillet; coat with cooking spray. Pour in egg mix & lift edges to let flow underneath.

  4. When almost set, add mushrooms, asparagus & cheese

  5. Fold in half & serve.
