Quick recipe to get a lot of greens into the diet. You control the fat. Also, you can substitute the pancetta with thick sliced bacon.

Recipe Ingredients for Savoy Cabbage and Pancetta

6 cups Savoy cabbage
1 cup mustard greens
4 garlic cloves
1 tbsp salt
4 oz pancetta
2 tbsp butter

Recipe Directions for Savoy Cabbage and Pancetta

  1. Fry pancetta in 1 tsp of butter. With a slotted spoon transfer bacon to paper towels to drain.

  2. Thinly slice cabbage and discard coarse stems from mustard greens. In a large rack set over boiling water steam cabbage, covered, until crisp-tender, about 10 minutes. Transfer cabbage to a large bowl and keep warm, covered.

  3. In a steamer rack set over boiling water steam mustard greens until tender, 10 to 15 minutes. Add mustard greens to cabbage and keep warm, covered.

  4. Mince garlic. In a small saucepan heat garlic, remaining butter, and 1 tbsp pancetta drippings until butter is just melted.

  5. Drizzle butter mixture over vegetables, tossing to distribute evenly, and season with salt and pepper.

  6. Transfer vegetables to a serving dish and serve topped with bacon.
