This is not crepes like Americans do them, but I learned this recipe way back in home ec (15 years ago - whoa), and still make it!

Recipe Ingredients for Savoury crepes

1 1/4 cup flour
1 tsp baking powder
2 tsp sugar
2 1/2 cups low fat milk
1 tbsp margarine
70 g ham, diced
100 g mushrooms, canned
70 g bell pepper
3/4 cup low fat milk
1 salt, pepper, chili powder
1 tbsp corn starch (dissolved in 1 tbsp water)

Recipe Directions for Savoury crepes

  1. Mix flour, baking powder and sugar. Add milk, and whisk out all the lumps.

  2. Melt the margarine in a skillet, and pour back into the batter.

  3. Make pancakes. This recipe makes thin pancakes, so be careful not to break them!

  4. While the pancakes are baking chop chop chop the other ingredients. Then sautee them in the very same skillet you just used.

  5. When they are starting to brown, add in milk and the (dissolved, very important!) corn starch.

  6. Add spices and wait for it to thicken before putting about two tabsps in each pancake, rolling it up.

  7. Put in a casserole dish and bake only long enough to heat everything through, about ten minutes.
