Recipe Ingredients for savory vegetable risotto

7 cup Natural Goodness Chicken Broth
1 cup Rice, Brown, Medium-grain
1 tsp Paprika
2.5 cup, cubes Squash, Winter, Butternut
2 small Turnips
2 small Peppers, Sweet, Red
2 medium Carrots
2 cup, whole Mushrooms
1 medium Squash, Summer, Zucchini, Includes Skin
4 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for savory vegetable risotto

  1. place rice with 1 cup broth and paprika in pan, bring to boil and cook until liquid is almost absorbed.

  2. quarter mushrooms and set aside.

  3. Peel and chop turnips, butternut squash and carrots, keeping separate. Chop all remaining vegetables coarsely.

  4. Heat remaining broth until boiling and keep hot. Add 1 cup broth, turnips, squash, peppers and carrots to pot, cooking and stirring until liquid is absorbed. Continue to add 4 more cups hot broth, 1 cup at a time, stirring between additions so that liquid is almost absorbed.

  5. Add remaining cup of broth and remaining vegetables, stirring and cooking so that risotto becomes creamy and liquid is nearly absorbed.

  6. 8 very large servings, sprinkle with parmesan cheese, if desired.
