Tasty beans for a healthy lunch. You can use less salt, also feel free to chop jalepenos and leave them in.

Recipe Ingredients for Savory Stand-alone Beans

4 cup Beans, Black, Mature Seeds
4 cup Small Red Beans
1 large Onions
4 clove Garlic
1 tbsp Olive Oil
8 tablespoon Poblano Pepper
2 tsp Salt, Table

Recipe Directions for Savory Stand-alone Beans

  1. Start with one pound each of dried small red beans and dried black beans.

  2. Rinse and soak beans for 4-6 hours.

  3. Chop onions, garlic, and 2 de-seeded poblano peppers.

  4. Half and de-seed 2 jalepenos.

  5. Slice about 2 oz of fresh ginger.

  6. Saute peppers until browned and aromatic.

  7. Add onions and garlic, sautee until soft.

  8. Add sliced ginger and beans with soak water.

  9. Ensure beans are covered w/ 1.5-2 inches of water.

  10. Bring to a boil then simmer covered for 1.5-2 hours.

  11. When the beans are soft and aromatic, (you can smell the beans over the peppers and onions) add salt.

  12. Cook uncovered to desired thickness.

  13. Remove jalepeno and ginger pieces.

  14. Enjoy! Can be frozen well.
