Recipe Ingredients for Savory Spinach Tofu Dip

12 oz soft silken tofu, such as Mori-Nu
1/4 cup dehydrated onions
1 t onion powder
1 t salt
1 T chicken broth powder
1/2 c light mayonnaise
1 clove garlic, peeled
10 oz frozen spinach, chopped, thawed, drained & pressed into colander
8 oz sliced water chestnuts, drained
1/4 c scallions, thinly sliced

Recipe Directions for Savory Spinach Tofu Dip

Drain tofu on paper towels. Place in food processor with onions, onion powder, salt, chicken broth powder, garlic and mayo. Blend until smooth. Add spinach and blend. Add water chestnuts and scallions; pulse just until chunky. Refrigerate for at least an hour before serving. Makes 4 1/2 c.
