Recipe Ingredients for Savory Spinach Pancakes

1/4 cup oatmeal, (quick cook)
2 tbsp wheat flour
2 tbsp wheat germ
1/4 cup fat free cottage cheese
2 large egg whites, whipped
1 cup spinach, chopped
1/4 cup onion, chopped
2 tbsp cilantro, chopped
1 small tomato, finely chopped
1 green chili pepper, de-seeded and finely chopped(optional)
1 dash red chili powder
1 dash curry powder
1 dash cumin
1 dash black pepper
1/4 tsp baking powder

Recipe Directions for Savory Spinach Pancakes

  1. Combine the liquid ingredients in a bowl and add dry ones except onion, tomatoes, coriander leaves and green chillies.

  2. Make a batter of pouring consistency.

  3. Heat a griddle or a non-stick pan over medium heat. Coat a little with oil and spoon the batter on pan and spread evenly.

  4. Sprinkle chopped onions, tomatoes, green chillies and coriander leaves.

  5. Cover with a lid and cook till the ingredients on the top looks cooked (you could also turn it over and cook it on both sides until done).

  6. Remove and serve with tomato chutney or greek yogurt.
