Savory Red Pepper Soup Recipe

A creamy soup that can be served hot or cold. Adapted from "Stop and Smell the Rosemary" published by the Junior League of Houston, Texas.

Recipe Ingredients for Savory Red Pepper Soup

1 stick unsalted butter
2 onions, large, chopped
2 cloves garlic, minced
4 carrots, large, peeled and chopped
1 potato, russet peeled and chopped
6 bell peppers, red, roasted, peeled, seeded and chopped
2 pears, fresh, firm-peeled cored and chopped
5 cups chicken stock
1 tablespoon chopped fresh parsley

Recipe Directions for Savory Red Pepper Soup

  1. In a large pan saute the onions and garlic in the butter for about 10 minutes.

  2. Add the carrots and saute 10 more minutes.

  3. Add the potatoes and bell peppers and saute 10 more minutes.

  4. Add the pears, chicken stock and parsley. Bring to a boil, reduce heat and simmer uncovered for 20 minutes or until all vegetables are tender.

  5. Season to taste-salt, pepper, paprika,and cool.

  6. Transfer in batches to blender or food processor and blend until smooth.

  7. Reheat or serve cold.

  8. Can be garnished with sour cream, cream fraiche or fresh parsley(not included in the recipe).

  9. Note: To roast peppers, blacken on all sides under a broiler. Put in Sealed plastic bag to steam until cool. Peel and remove seeds. Then slice or chop.
