Wonderful side dish instead of traditional turkey stuffing. Original redcipe found on line and altered to reduce calories/fat suggested serving with pork tenderloin.

Recipe Ingredients for Savory Pumpkin Sage Bread Pudding

8 oz french bread
2 tablespoons butter
1 small onion, diced
1 tablespoon garlic, minced
1/2 cup parmesan cheese, freshly grated
3/4 cup canned pumpkin
4 eggs
2 cups fat free half and half
1 tablespoon salt
1 1/2 teaspoon pepper
1/4 cup fresh sage, chopped

Recipe Directions for Savory Pumpkin Sage Bread Pudding

  1. Cook onions, celery and garlic in butter until soft and translucent.

  2. Chop french bread into bite-sized cubes and toss with onion mixture and cheese.

  3. Mix remaining ingredients and pour over bread mixture and let stand for at least an hour to allow bread to absorb liquid.

  4. Bake at 375 in 9 x 7 baking dish until set, about an hour.
