Recipe Ingredients for Savory Prune Pie

40 g prunes , pitted
2 apricots, pitted
1 medium red onion, quartered and sliced
1 T olive oil
1/2 cup balsamic vinegar
1/2 t mustard
4 oz feta cheese
1/4 cup walnuts
2 serving agave
18 oz puff pastry

Recipe Directions for Savory Prune Pie

  1. Make crust with last three ingredients and pat into the bottom of a small baking dish and pre bake.

  2. slice prunes and apricots. pour boiling water on to soften. Let sit for 20 minutes.

  3. Saute onions. Add vinegar and re

  4. duce. Add prunes and apricots to onions; add agave, mustard and walnuts--cook, reduce. Put all in baked pie crust. Crumble feta cheese on top.

  5. Bake in 350 deg oven until cheese slightly browns.
