Recipe Ingredients for Savory Moroccan Soup

4 c stock
3 c water
14 1/2 oz diced tomatoes, with juice
3 c zucchini, sliced into half circles
1 c canned chickpeas, rinsed and drained
6 artichoke hearts, cut in half
1 c quinoa
1/2 c barley
1/4 c fresh parsley, chopped
6 scallions, thinly sliced
1/4 tsp cinnamon
1/4 tsp cayenne
1/2 tsp basil
1/2 tsp oregano

Recipe Directions for Savory Moroccan Soup

Bring stock & water to a rolling boil. Reduce heat, add remaining ingredients, and simmer uncovered about 5 to 7 minutes. Add salt and pepper to taste, and serve.
