Recipe Ingredients for Savory Lentils and Brown Rice

1 cup lentils
5 cups chicken broth
3 tablespoons vegetable oil
2 large onions, chopped
2 stalks celery, chopped
4 cloves garlic, chopped
2 teaspoon ground cumin
1 1/2 cups Minute brown rice
2 tsp salt
1 freshly ground black pepper
1/4 cup chopped parsley

Recipe Directions for Savory Lentils and Brown Rice

  1. Sort & rinse the lentils carefully, discarding any stones. , then combine with 2 cups of the broth in a large saucepan.

  2. Bring to a boil, cover and cook over medium heat about 30 minutes

  3. Drain the liquid into a measuring cup, leaving the lentils in the pan and add enough water to make 4 cups.

  4. In a heavy skillet, heat the vegetable oil over medium heat.

  5. Add the onions & celery and saute, stirring occasionally, until they are well browned, about 15 minutes.

  6. Add the garlic and cumin and pepper and saute 30 seconds;

  7. Add reserved lentil cooking liquid plus the additional broth to the vegetables and spices.

  8. Add the lentils and return everything to a boil and simmer on medium heat until the rice is done (about 10 minutes).

  9. Add salt and parsley and fluff gently with a fork.

  10. Serve hot.
