A savory Lentil Soup, you can substitute 1 1/2 cups ham for the Canadian Bacon if you prefer.

Recipe Ingredients for Savory Lentil and Canadian Bacon Soup

16 oz dried lentils, sorted and rinsed
29 oz low-sodium chicken broth
6 oz Canadian-style bacon, coarsely chopped
1 cup carrots, cut into 1/2-inch pieces
1 cup potato, peeled and cut into 1/2-inch pieces
1/2 cup onion, chopped
4 cups water
1 tsp dried thyme leaves

Recipe Directions for Savory Lentil and Canadian Bacon Soup

  1. Mix all ingredients in 3 1/2-6-quart slow cooker.

  2. Cover and cook on low heat setting 8-9 hours (or high heat setting 3-5 hours) or until lentils are tender. Stir well before serving.
