Recipe Ingredients for Savory Fresh Salmon Cakes

16 oz. salmon, fresh
42 g saltines, crushed (15 crackers)
1 egg, beaten
2 tbsp. olive oil
1/2 cup red onion, diced
2 tbsp lemon juice (about 1/2 one lemon)
1 tbsp. garlic, minced

Recipe Directions for Savory Fresh Salmon Cakes

  1. Poach salmon in a bit of water until not-quite-done (still pink inside). Rinse with cold water and dry with a paper towel.

  2. Flake salmon in a bowl and add all other ingredients plus salt and pepper to taste (fresh ground recommended).

  3. Cook in a pan with non-fat cooking spray (or olive oil, remembering to add extra calories if counting) until well browned on each side.
