These are a bit sweet, a bit savory, and a fabulous breakfast! Serve alone or with maple syrup. Can also add some cheddar cheese (about 1/2 - 1 cup).

Recipe Ingredients for Savory Breakfast Waffles

1 cup cornmeal
1 cup flour
3 oz ground chicken
1/4 cup butter
1/4 cup canola oil
4 eggs
1 cup milk
1 cup spinach, frozen chopped, thawed
1 cup corn
1 tbsp baking powder
1 tsp baking soda
1 tsp salt
1/2 tsp nutmeg

Recipe Directions for Savory Breakfast Waffles

  1. First, place metal bowl in freezer for just a few minutes to cool.

  2. Brown ground chicken and season well with salt, pepper, and real maple syrup, if desired.

  3. Combine flours and leaveners with salt.

  4. Add cooked chicken and vegetables.

  5. Separate eggs.

  6. Combine egg yolks with milk and oils. Whisk.

  7. Combine with dry ingredients.

  8. Whip egg whites until stiff peaks form.

  9. Fold into rest of batter.

  10. Spray waffle iron and cook per iron directions.
