Recipe Ingredients for Savory Barley Soup with Wild Mushrooms and Thyme

1/2 oz dried porcini mushrooms
1/2 cup dry white wine
1 tbsp olive oil
1/2 cup shallots, chopped
2 garlic cloves, minced
8 oz fresh cremini mushrooms, chopped
1 tsp fresh thyme, minced
1/4 tsp salt
1/4 tsp pepper
3 cups chicken broth
3/4 cup pearl barley
1 tbsp tomato paste
2 tsp lemon juice
1 salt and pepper to taste

Recipe Directions for Savory Barley Soup with Wild Mushrooms and Thyme

  1. Rince porcinis well to remove any dirt or grit. In a small saucepan, bring wine to a simmer. Remove from heat and add porcinis; let stand for 15 minutes. Drain porcinis over a bowl, reserving liquid, and finely chop.

  2. Heat oil in a large, heavy pot over medium-high heat. Add shallots and garlic. Cook, stirring frequently, until shallots are wilted, about 3-5 minutes. Add creminis, thyme, 1/4 tsp salt and 1/4 tsp pepper; cook until creminis release their juices and begin to brown, 4-5 minutes. Add reserved wine and boil, scraping up any browned bits from pan bottom, for one minute.

  3. Add broth, barley, tomato paste, 3 cups water and chopped porcinis to pot. Cover and simmer until barley is tender to the bite, 45-50 minutes.

  4. In a blender or food processor, puree about 1 cup soup until smooth. Return soup to pot, heat until just hot and stir in lemon juice. Season soup to taste with additional salt and pepper. Serve at once.
