Recipe Ingredients for Savannah Beans & Greens Soup

1 onion, chopped
2 cloves garlic, pressed
1 tbs olive oil
3 cups vegetable stock
1/4 lb kale, chopped
15 ounce diced tomatoes
15 ounce black-eyed peas
1 tbs balsamic vinegar
1 tbs brown sugar
1/4 tsp thyme
1/4 tsp allspice
1 cup cooked brown rice
1 salt, pepper, cajun seasoning to taste

Recipe Directions for Savannah Beans & Greens Soup

  1. Cook onion and garlic in oil. Add stock and simmer 10 minutes.

  2. Add kale, tomatoes & juice, black-eyed peas, vinegar, brown sugar, thyme, allspice, seasonings. Simmer 15 minutes.

  3. Stir in rice, cook another 5 minutes, adjust seasonings.
