Zucchini, carrot, green pepper, sauteed in olive oil

Recipe Ingredients for Sauteed Veggies

1 zucchini, cubed
2 green onions, chopped
1 carrot, sliced
2 green peppers, sliced
1 tbsp olive oil
1/8 tsp salt
1/8 tsp black pepper, freshly ground

Recipe Directions for Sauteed Veggies

Heat oil over medium heat in skillet. Put in carrots, saute until almost tender. Put in the rest of the vegetables and season with salt and pepper. Cook until tender. Serve over pasta (I usually add a dash of marinara sauce or some crushed tomatoes and serve over whole wheat pasta) Easy to substitute whatever you have on hand.
