I wanted to make ratatoille one time but that kind of failed, and I just sauteed them because I was pressed with time.

Recipe Ingredients for Sauteed Veggies

0.5 tomato Tomatoes, Red, Ripe
0.25 cup (1" cubes) Eggplant
0.25 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.33 medium (2-1/2" dia) Onions
1 clove Garlic
0.125 cup, chopped Carrots
1 tbsp Extra Virgin Olive Oil
0.5 tablespoon Oregano
1 tsp Garlic Powder
1/4 tsp Onion Salt
