Simple veggie medley to accompany pasta and any meat of your choice. I've used cooked chicken sausage, cooked turkey keilbasa, baked salmon, cooked shrimp and poached chicken.

Recipe Ingredients for Sauteed Veggies for Pasta

1 red bell pepper, diced
1 yellow bell pepper, diced
1 medium zucchini, diced
1 roma tomato, chopped
1 clove garlic, minced
2 tablespoons extra virgin olive oil
1 dash italian seasoning
1/4 cup parmesan cheese

Recipe Directions for Sauteed Veggies for Pasta

  1. Heat oil in large skillet over medium high heat.

  2. Add zucchini and stir to coat. Cook about 1 minute.

  3. Add bell peppers, seasoning and garlic. Cook about 5 minutes or until zucchini has softened.

  4. Add tomato and (if using) cooked meat. Stir to combine and cook throughout - another 1-3 minutes depending on meat.

  5. Sprinkle with cheese and serve tossed with hot cooked pasta.
