Recipe Ingredients for sauteed veggies/chicken/brown rice

1 red bell pepper
1 yellow bell pepper
1 green bell pepper
2 1/2 cups chopped cooked chicken
2 cups cooked brown rice
1/4 yellow onion
4 cups fresh spinach
2/3 cup light sour cream

Recipe Directions for sauteed veggies/chicken/brown rice

  1. sautee veggies together with olive oil/cooking spray

  2. cook 1 cup rice according to directions

  3. add chicken and rice to sauteed veggies and continue to cook

  4. add fresh spinach and allow to cook down with sauteed mix.

  5. add sour cream for consistency and flavor

  6. top with cheese if desired
