Recipe Ingredients for Sauteed Vegetables

2 small Squash, Summer, Zucchini, Includes Skin
1 cup, sliced Squash, Summer, Crookneck And Straightneck
1 medium (2-1/2" dia) Onions
1 tsp Garlic
1 medium Green Bell Pepper
1 medium Orange Hothouse Bell Pepper
1 medium Yellow Hothouse Bell Pepper
1 serving Extra Virgin Olive Oil

Recipe Directions for Sauteed Vegetables

  1. Chop the peppers into bite size pieces and cut the onion into small wedges. Slice the squash into discs.

  2. Add olive oil to a non-stick skillet and heat. Add garlic, then onions and peppers. When onions are translucent, add the squash. Cover the pan and cook for about 10 minutes more.
