Recipe Ingredients for sauteed vegetables with egg white omelet

8 egg whites
1/8 tsp salt
1 scallion
3 tbsp butter
8 oz carrots
1 cup water
1 tbsp thyme
1 tbsp marjoram
2 tbsp olive oil
1 lb asparagus
4 oz fava beans
1 tbsp parsley
1 tbsp parmesan

Recipe Directions for sauteed vegetables with egg white omelet

  1. Beat egg whites and 1/4t salt until stiff.

  2. Melt 1T butter in a work. Pour in beaten egg white and cook until set. Turn onto a board and cut into thin strips.

  3. Saute scallion in remaining butter until lightly browned. Add carrots and stir fry for 2-3 min. Season with salt. Pour in water and simmer until tender - 8-10 min.

  4. Stir-fry thyme and marjoram in oil for 1-2 min. Add asparagus and fava beans and stir-fry until tender, 5-7 min.

  5. Stir in carrots and parsley

  6. Stir-fry for 1 min.

  7. Add omelet strips and sprinkle with parmesan.
