Good, but a little too subtle in terms of flavoring.

Recipe Ingredients for Sauteed vegetables, AHA

1 tablespoon olive oil
3 garlic cloves
1 medium eggplant, diced
1 yellow squash, thinly sliced
1 zucchini, thinly sliced
1 medium red bell pepper, but into 1/2" strips
8 ounces tomato sauce
1/2 cup vegetable broth
1 teaspoon dried oregano, crumbled
1/4 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Sauteed vegetables, AHA

  1. Heat oil in non stick skillet, cook garlic, then add other veggies. Cook until tender, then add water, 1 tablespoon at a time, if mixture begins to stick to the skillet.

  2. Stir in tomato sauce, 1/2 cup broth, oregano, salt, and pepper. Bring to a simmer. Reduce heat, simmer partially covered for 15 minutes.

  3. Serve over polenta or rice.
