You can use any tender green instead of spinach. I like to use Chinese bean sprouts which sautees quite nicely. You can also use chard, or beet greens

Recipe Ingredients for Sauteed Tender Greens


From the Best Recipe Cookbook:
3 tbsp olive oil
2 garlic cloves, minced
2 lbs spinach
1 teaspoon salt
1 teaspoon ground pepper
1 lemon wedge

Recipe Directions for Sauteed Tender Greens

  1. Heat oil and garlic in deep pot until garlic sizzles (about 1 min)

  2. Add coarsely chopped wet greens, cover, and cook over medium-high heat, stirring occasionally, until greens completely wilt (about 2-3 min)

  3. Uncover and season with salt and pepper to taste.

  4. Cook over high heat until liquid evaporates (2-3 min)

  5. Remove from heat, squeeze lemon over the vegs and serve
