From "the New Greek Cuisine" cookbook. These peppers are especiallyu delicious tossed with plain pasta, tucked into sandwiches or served with roasted or grilled meats.

Recipe Ingredients for Sauteed Sweet Peppers with Toasted Garlic and Capers

5 T extra-virgin olive oil
2 large red bell peppers, sliced lengthwise into 1/4" strips
2 large yellow bell peppers, sliced lenghtwise into 1/4" strips
1 kosher salt
8 garlic cloves, thinly sliced
1 T capers, drained

Recipe Directions for Sauteed Sweet Peppers with Toasted Garlic and Capers

  1. In a large deep skillet, heat 3 T of the olive oil. Add teh peppers and season with salt. Cover and cook over moderate heat, stirring occasionaly, until softened, about 18 min. Transfer the peppers and their juices to a bowl.

  2. Wipe out he skillet. Heat the remaining 2 T olive oil in the skillet. Add the garlic and cook over moderate heat until golden, about 3 min. Add the capersa nd teh reserved peppers and their juices. Cook, tossing until the peppers are warm, season with salt. Transfer the peppers to a bwol adn serve arm or at room temperature.

  3. *Note: The peppers can be refreidgerated up to 5 days.
