Summer squash and zuchini sauted with onion and garlic.

Recipe Ingredients for Sauteed Summer Squash

1 pound summer squash
1 medium zuchini
1 medium onion
2 cloves garlic
1 teaspoon light olive oil
1 teaspoon soy sauce

Recipe Directions for Sauteed Summer Squash

  1. Slice summer squash and zuchini into 1"x2" pieces

  2. Slice onion in half and then into half rings

  3. Crush garlic with knife blade to remove skins and grind into small pieces

  4. heat olive oil in pan on medium heat

  5. sautee squash, zuchini, onion and garlic in pan with soy sauce until squash slightly softens (about 3-5 minutes)

  6. Serve hot as a summer side dish.
