onions and butternut squash cubes are sauteed until soft and then baked in the oven to slightly crisp the edges.

Recipe Ingredients for Sauteed Squash and Onions

5 cups butternut squash, peeled and diced
1 medium onion
2 tbsp olive oil
2 cloves garlic
1 salt
1 freshly ground pepper

Recipe Directions for Sauteed Squash and Onions

  1. sautee onion on medium in 1 tbsp olive oil for 5 mins.

  2. add a bit more olive oil, the squash ,garlic, and sprinkle well with salt and pepper. saute until squash is tender.

  3. dump onto a cookie sheet covered in parchment paper and bake at 350 for 10 mins or until slightly crisp.
