Tasty, low-carb and very high in nutrients. Very easy to make, especially if you start with pre-washed spinach.

Recipe Ingredients for Sauteed spinach with onions, chiles and tomatoes

2 bunches spinach (about 8 ounces)
1 c diced tomatoes
1/4 c. green chiles, chopped
1/2 c. chopped onions
1 clove garlic, minced
1/2 tsp. salt
1 T. olive oil

Recipe Directions for Sauteed spinach with onions, chiles and tomatoes

  1. Saute onion until soft, add garlic and saute for another 1-2 min., until fragrant.

  2. Add salt, chopped chiles and tomatoes, and simmer until "saucy," stirring occasionally, about 10 min.

  3. Add spinach, toss and cover. Cook, tossing occasionally, until spinach is just wilted. Add additional salt to taste an serve.
