From Veganomican, p. 187. We served over orzo and ended up using more olive oil than in the recipe. You can use vegetable broth or water.

Recipe Ingredients for Sauteed Seitan with Mushrooms and Spinach

1 tbsp olive oil
490 g or 2 c seitan, sliced
1 onion, sliced
2 c cremini mushrooms, sliced
3 cloves garlic, minced
1/2 tsp dried thyme
1/2 tsp dried basil
1 tsp salt
1/8 tsp ground black pepper
1/4 c white wine
1/4 c water
6 c spinach

Recipe Directions for Sauteed Seitan with Mushrooms and Spinach

  1. Preheat a large, lidded skillet over medium-high heat with the olive oil. Saute the seitan, sliced into bite-size pieces, for about 2 minutes. Add the onions, sliced into thick half-moons, and saute for another 5 minutes, until softened, covering the pan but lifting it to stir occasionally.

  2. Add the mushrooms, garlic, thyme, basil, salt, and pepper, and saute for another 8 minutes, again, covering but occasionally stirring. Once the mushrooms are cooked and soft, add the wine and broth (or water). Add the spinach in batches and use tongs to incorporate them with everything else. Cook for about 5 more minutes.

  3. Serve immediately, with slices of lemon, if desired.
