Recipe Ingredients for Sauteed Scallops with Spinach and Mustard Curry Sauce

6 ounces sea scallops (3 large)
1 tbsp olive oil
3 ounces fresh spinach
1 tbsp fat-free sour cream
1 tbsp Dijon mustard
1/2 tsp curry powder

Recipe Directions for Sauteed Scallops with Spinach and Mustard Curry Sauce

  1. Saute scallops in oil for about 2 minutes per side and remove from pan.

  2. Add spinach to pan and saute about 1 minutes until wilted.

  3. Add cream, mustard, and curry powder and stir rapidly until blended.

  4. Return scallops to pan, stir, and serve.
