Sauteed Greens w/pine nuts and goat cheese

Recipe Ingredients for Sauteed Greens

85 g Organic Baby Spinach
6 oz Arugula
4 oz Goat, Soft Type Cheese
4 tbsp Pine Nuts, Pignolia, Dried
3 serving Trader Joe's President's Reserve EVOO
3 clove Garlic

Recipe Directions for Sauteed Greens

Toast pine nut in 1 T of EVO, remove nuts and add remaining oil and garlic to the pan. Once garlic is soft add spinach and arugula slowly, stirring and seasoning w/S&P. Saute on low until wilted. Move to bowl and add pine nuts and goat cheese, stir gently once or twice to incorporate.
