Eggplant experiment. Not bad, but probably won't be tried again.

Recipe Ingredients for Sauteed Eggplant small sliced

1 small eggplant, sliced
1 tbsp canola oil
1 cup flour
1 egg,beaten

Recipe Directions for Sauteed Eggplant small sliced

  1. Beat one egg in shallow bowl

  2. In another bowl place one cup flour

  3. Wash eggplant in running water, dry

  4. Peel eggplant

  5. Slice eggplant into 1/4 inch sections

  6. Heat canola oil in non-stick pan on Medium heat

  7. Coat eggplant sliceswith egg and then flour

  8. Cook eggplant in pan until lightly brown on each side

  9. Remove from pan and place cooked eggplant on dish

  10. Serve or eat eggplant
