Recipe Ingredients for Sauteed Chicken with Pasta and Vegetables

1 pound chicken breast, thawed and chopped
1/2 pound pasta (ziti, rotelle, or other)
1 small onion, chopped
1 large tomato, diced
1/2 tsp. basil
4 ounces mushrooms
1/4 tsp. salt
1/4 tsp. pepper

Recipe Directions for Sauteed Chicken with Pasta and Vegetables

  1. Cook pasta according to directions and drain.

  2. Chop chicken into small pieces and brown with onion (in small amount of oil) in a 12-inch skillet over medium-high heat for 5 minutes, stirring frequently.

  3. Add tomato, basil, and mushrooms (with a small amount of water)to chicken/onion mixture and cook covered for 10 minutes over medium heat until tender.

  4. Add pasta and toss. Dish is ready to serve.
