Recipe Ingredients for Sauteed Chicken with Meyer Lemon and Rosemary

1 Serving Chicken
3 tbsp Olive Oil
2 tbsp Rosemary, Fresh
2 tsp Kosher Salt
0.5 tsp Pepper, Black
1.5 fruit without seeds Lemons
2 tsp unpacked Sugars, Brown
1 cup Leeks, (Bulb And Lower Leaf-portion)
2 clove Garlic

Recipe Directions for Sauteed Chicken with Meyer Lemon and Rosemary

  1. 1 1/2 pounds of chicken cut into 1/2 inch strips.

  2. Toss the chicken with 1 tbps OO, rosemary, 1 tsp. salt and pepper.

  3. Trim the ends from 1 lemon, quarter lengthwise and remove seeds. Slice quarters crosswise into 1/8 inch slices.

  4. Bring small pot of water to a boil. Add lemon slices, cook 5 min.

  5. Drain lemon under cold water.

  6. Rinse out pot.

  7. Refill pot with one cup water and add sugar and salt.

  8. Bring to boil.

  9. Drop blanched lemons into boiling water and simmer 3 min.

  10. Drain under cold water.

  11. Heat a skillet high heat 5 min.

  12. Add 2 tbsp OO, shimmer, add lemon slices, stir fry till golden. Add leeks, cook for 3 more min. Stir in garlic for 1 min. Push leek mixture to side, place in chicken in same pot. Cook 4 min ea side. Mix leeks and lemon into the chicken and cook about 3-6 min more. Drizzle with lemon juice. Serve.
