Very elegant meal just like you get at a pricey restraurant but easy and convenient right in your own home.

Recipe Ingredients for Sauteed Chicken with Caramelized Onion

24 ounce skinless, boneless chicken breasts
2 small onions
1/2 tsp salt
1/2 tsp black pepper
4 tsp olive oil
2 tbsp sugar
1/3 cup chicken broth, reduced sodium
1 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
1 tbsp balsamic or red wine vinegar

Recipe Directions for Sauteed Chicken with Caramelized Onion

  1. Cut onions into 6 wedges each.

  2. Sprinkle chicken with 1/4 tsp salt and 1/4 tsp pepper.

  3. Heat in large skillet 2 tsp oil and add chicken, saute until brown. Transfer to plate.

  4. Add remaining oil and saute 1 Tbsp sugar and remaining salt and pepper until onions are golden brown. (about 8 min.) Stir frequently breaking apart the onions as they cook.

  5. Add broth and boil until if evaporates.

  6. Stir in herbs and remaining sugar. Return chicken to skillet and sprinkle with vinegar.

  7. Cook uncovered until juices of chicken run clear, about 4 minutes.

  8. Serve 1 chicken breast topped with 1/2 cup onions.
