24 oz raw Boneless Center Cut Pork Loin Chop
0.67 tbsp Vegetable Oil, Canola
3 tbsp chopped Shallots
1.5 cup Chicken Broth
8 oz Wine, Dessert, Sweet
0.5 cup Dried Cherries
0.25 serving Milk Skim Fat Free Paper Carton
0.33 serving (Argo) Corn Starch
2 tsp Rosemary, Fresh

Recipe Directions for Sauteed Boneless Pork Chops with Port Wine and Cherry Sauce

  1. Pat the pork chops dry with paper towels and season with salt and pepper. Heat the oil in a 12-inch skillet over med-high heat until just smoking. Brown the chops well on the first side, about 3 minutes.

  2. Flip the chops over, reduce the heat to medium, and continue to cook until they register 140-145 degrees on an instant-read thermometer, 5-10 minutes longer. Transfer chops to a platter, tent loosely with foil, and let rest while making the sauce.

  3. Add the shallots to the fat left in the skillet and cook over medium heat until softened, about 2 minutes. Stir in the broth, port wine, and cherries, scraping up any browned bits. Bring to a simmer and cook until reduced to 3/4 cup, about 5 minutes.

  4. Add any accumulated meat juice. Whisk the milk and cornstarch together, then whisk the mixture into the simmering sauce and cook until the sauce has thickened, about 1 minute. Remove from heat, stir in the rosemary (minced) and season with salt and pepper to taste. Soon the sauce over the chops and serve.
