Recipe Ingredients for Sautéed Vegetable Hummus

1 tbsp Extra Virgin Olive Oil
1 clove Garlic
1 small Onions
0.25 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 oz Juice
3 oz Organic Tahini Butter - No Salt (Raw)
1.8 oz Extra Virgin Olive Oil
0.25 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
2 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 tsp Salt, Table

Recipe Directions for Sautéed Vegetable Hummus

  1. Heat 1 tbsp olive oil in a frying pan [I like to use cast iron]. Once heated, add onion and garlic and sautée for 2-3 minutes on medium heat, mixing every minute or so to avoid burning.

  2. Add celery, carrot, and red pepper. Cover and cook on medium-low heat for 4-5 minutes until carrots are tender.

  3. In a blender combine reserved liquid, lemon juice, tahini, and olive oil. Top with sautéed veggies, potato, chickpeas, and salt.

  4. Blend until smooth.

  5. Garnish with cumin and serve with crackers or vegetable sticks.
