Makes 8 servings



Saute garlic in Olive oil, add onion and peppers, cook 5 minutes, add diced tomatoes and sauce, cook 10 minutes, add remaining ingrediants, cook 30 minutes. Boil sausage in frying pan with 2 cups water, lid on, turn after bottom cooked, remove lid, cook until water evaporates, brown sausage minimally on bottom, turn and brown other side, add other browning agents or sweeting agents as desired. Remove from pan and add to sauce, cook 30 minutes. Let stand for 1 hour or overnight to allow sausage to absorb flavors then reheat.

3 green peppers
1 red pepper
1/2 cup red wine
20 oz diced tomatoes
12 oz tomatoe sauce
