This is a nice recipe I made up one weekend but my wife and I like it. We use rotini noodles (wheat) to serve this dish.

Recipe Ingredients for Sausage, Zucchini, Squash Meledy

1 lb beef sausage, cooked
1 yellow onion, diced
1 tablespoon garlic cloves, minced
1 cup sliced mushrooms
1 cup chicken broth
1 cup fresh zucchini, sliced thin
1 cup fresh squash, sliced thin
1 medium fresh tomato, diced
1/2 cup Heinz Ketchup
12 ounces pasta, wheat (noodles cooked and drained)
1/2 cup parmesan cheese
2 tablespoons olive oil

Recipe Directions for Sausage, Zucchini, Squash Meledy

  1. Brown sausage, drain excess fat, set aside.

  2. Saute onion, garlic, tomato in 1 tbsp of olive oil

  3. Saute mushrooms in 1 tbsp of olive oil

  4. Add sausage, onion, garlin, tomato, mushrooms, zucchini, squash, chicken broth, ketchup, cover and cook 15 minutes. Stir as needed.

  5. Serve on top of pasta (wheat) garnish with parmesan cheese.
