Recipe Ingredients for Sausage Zucchini Frittata Anita Barry

8 oz Turkey sausage
2 cups zucchini, shredded
2 scallions, sliced
1 tbs basil, minced
1 tsp italian seasoning
4 eggs
1/3 cup heavy cream
4 oz cream cheese, cut in 1/2 inch cubes
1 cup shredded mozzarella cheese
1 cup shredded sharp cheddar cheese

Recipe Directions for Sausage Zucchini Frittata Anita Barry

  1. Preheat oven to 325

  2. Spray 8" pie pan with Pam.

  3. Brown the sausage, drain.

  4. Spread sausage on bottom of pan. Top with zucchini, scallions, seasonings.

  5. Whisk eggs and cream. Pour over sausage mixture.

  6. Sprinkle cream cheese on top, then mozz. and cheddar.

  7. Bake 45 mins or until knife comes out clean.

  8. Serve warm.
