Good comfort food soup, great for the cold winter nights.

Recipe Ingredients for Sausage and Sweet Potato Chowder

1 lb turkey sausage , drained
1 cup chopped onion
1/2 cup chopped celery
2 minced garlic cloves
3 1/2 cups low sodium chicken broth
2 sweet potatoes , peeled and diced
1 can of corn , drained
1 teaspoon thyme
1/2 teaspoon crushed rosemary
1/4 teaspoon salt, to taste
1/4 teaspoon pepper
1 cup skim milk
1 1/2 tablespoons cornstarch, dissolved into
1/2 cup shredded sharp cheddar cheese

Recipe Directions for Sausage and Sweet Potato Chowder

  1. In a soup pot, brown and crumble the sausage with the onion and celery. Cook until no longer pink. Drain off excess fat and return the mixture to the pot.

  2. Add to the pot the garlic, broth, sweet potatoes, corn, thyme, rosemary, salt and pepper.

  3. Bring to a boil. Reduce heat and cover and simmer for about 15 minutes or until sweet potatoes are tender.

  4. Mix/shake together the cornstarch and of milk; stir into the soup.

  5. Served topped with cheddar cheese (optional)
