Adapted from Eating Well. Calories can be significantly reduced by using turkey sausage, which my store did not carry. Also used regular brown rice instead of instant and cooked it in advance.

Recipe Ingredients for Sausage stuffed green peppers

2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
4 oz Sausage, Italian, Pork
1 Tbsp, leaves Basil, Dried
1/3 cup, shredded Cheddar Cheese
1 1/2 cup Rice, Brown, Medium-grain, Cooked
3 tbsp Sauce, Prego 100% Natural Spaghetti Sauce, Traditional, Jar

Recipe Directions for Sausage stuffed green peppers

  1. Preheat broiler.

  2. Place the peppers in a large microwavable dish and add about 1/2 inch water. Steam in microwave for 7-9 minute until crisp-tender. Drain and transfer peers to roasting dish.

  3. Meanwhile cook the Italian sausage in a large skillet over medium heat until cooked through. Add the tomato, basil, rice, and spaghetti sauce. Simmer for a few minutes, until the tomato starts to deteriorate.

  4. Add half the cheese to the mixture. Divide between the peppers, and top with the remaining cheese. Broil 2-3 minutes, until the cheese is melted.
