I wanted to use up my extra squash, so put this recipe together. Use any available squash to equal 3 cups. Calorie Count couldn't find the Honeysuckle White Turkey Brats, so I just put in turkey sausage to equal the calories. Each turkey Brat had 160 Calories. It also wouldn't calculate The Organic Tomato Basil Sauce I used. It has 240 calories per cup. If your sausage or sauce is labeled differently be sure to refigure the calorie count.

Recipe Ingredients for Sausage/Squash Casserole

9 ounces turkey sausage (5 Honeysuckle White Turkey Brats)
1 cup squash (white)
1 cup yellow squash
1 cup zucchini
1 T. Dry Onion Flakes
1 T. basil
1 T. parsley
1 T. oregano
1 cup chicken broth
1 cup Pasta Sauce (I used tomato basil with 240 calories per cup)
1 T. olive oil

Recipe Directions for Sausage/Squash Casserole

  1. Brown Brats in a skillet, then put a little water on them and steam until fully cooked.

  2. Take Brats out of the skillet and cut into bite sized pieces.

  3. Wipe skillet down with a paper towel to get out any fat that remains.

  4. Put 1 T. Olive Oil in skillet. Saute squash until it starts to brown nicely.

  5. Add 1 cup chicken broth, the onion, basil, parsley and oregano.

  6. Cover skillet and reduce heat to low.

  7. Cook until squash is tender.

  8. Add pasta sauce and Brats.

  9. Cook until bubbly.
