Light creamy dish with sausage, pasta and spinach, adapted from Theresa Najjar's recipe in the Boston Globe

Recipe Ingredients for Sausage, Spinach and Pasta

2 lbs Italian Sausage, spicy (uncooked), cut lengthwise and sliced into 1" pieces
1 onion large, chopped
5 c chicken broth, low-sodium
1 lb thin spaghetti, broken into thirds
20 oz spinach, fresh, stems removed
1 c half-and-half
1/2 c Parmesan cheese, grated

Recipe Directions for Sausage, Spinach and Pasta

  1. Total cooking time: about 1/2 hour

  2. For lower fat, try chicken Italian sausage

  3. Heat large pot over medium heat

  4. Add sausage and stir to keep from burning (2 minutes).

  5. Add onion, cooking until sausage is cooked through (5 minutes).

  6. Remove fat by draining or spooning off.

  7. Add broth, bring to a boil.

  8. Add pasta, stirring occasionally, cooking until al dente (8 minutes).

  9. Add spinach, cover pot, cooking until wilted (3 minutes). Add in batches if unwilted spinach will overfill pot.

  10. Add in half-in-half and cheese.

  11. Stir until sauce thickens (5 minutes).

  12. Serve immediately
