Yummy soup, filling, low-cal, flavorful. Kielbasa Sausage, vegi's, saurkraut. Vegitarian Kielbasa works well too! Makes almost 1.5 gallons of soup!!!

Recipe Ingredients for Sausage and Saurkraut Soup

200 g Barley-Raw
8 cups Beef Stock
192 g Ham stock Cubes
4 cups Saurkraut with liquids
150 g onion
9 g Garlic
2380 g smoke turkey kielbasa
183 g carrots
875 g canned diced tomatos with chili's

Recipe Directions for Sausage and Saurkraut Soup

  1. cook barley according to package, set aside

  2. saute carrots and onion in cooking spray for 8 min.

  3. add garlic and saute for 1 min. longer

  4. add beef stock, ham stock, and diced tomotos to large soup pot

  5. in soup pot add the sauteed carrots/onion mixture

  6. simmer for 60 minutes stirring occasionally

  7. add sliced kielbasa and saurkraut, and a pinch of thyme

  8. simmer for 30 minutes longer

  9. add barley.

  10. serve and enjoy!
